The Icing on the Cake

Simple Chocolate Icing
  • 2 tablespoons cocoa
  • 1.5 cups icing sugar or icing mixture
  • 2 – 3 tablespoons milk
In a bowl sift the cocoa and icing sugar.  Add the milk one tablespoon at a time and mix to desired consistency.  Spread over a cold cake.

Chocolate Frosting (A very rich, thick icing – perfect for piping)
  • 2 cups of icing sugar or icing mixture
  • 5 tablespoons cocoa
  • 5 tablespoons butter (at room temperature)
  • 4 tablespoons evaporated milk
  • 1 teaspoon vanilla
Sift dry ingredients together in a bowl.  In another bowl beat the butter and vanilla until creamy.  Gradually add the dry ingredients to the wet ingredients – use the milk to achieve the required consistency.

Cream Cheese Icing
  • 250 grams Cream Cheese (such as Philly)
  • 4 tablespoons icing sugar
  • 2 teaspoons of lemon zest
In a mixing bowl combine the above ingredients and beat on high speed until thick and creamy without any lumps.  Perfect on carrot cake!
